Berries and Cream White Chocolate Bark recipe

I have a weakness: White Chocolate.  I could just gobble down piles and piles of white chocolate.  And, what makes this worse, is that I stumbled upon an even more delicious way to eat it: Berries and Cream White Chocolate Bark.  It is so wonderful–doubling as both candy and dessert, and really dangerous to be around if you are pregnant and have very little self control to begin with.

My son and I made this special batch of Berries and Cream White Chocolate Bark for my dad, who is very busy trying to get the crop planted, the rocks picked etc etc, and also has a terrible weakness for White Chocolate–but who doesn’t love White Chocolate?  We brought some of this wonderful treat out to my dad one day when he was busy in the tractor and his first reaction was to say he didn’t want any…but when I told him it was White Chocolate, he quickly changed tone and quickly replied, “Oh, I’ll take a big one.”

Not only is this treat oh so yummy, it is also patriotic–check it out: Berries and Cream White Chocolate Bark is Red, White and Blue!  The perfect treat for Memorial Day–I certainly think so!  And, since we ate up this batch in record time I guess I will be making some more really soon–but that’s fine.  It is super simple!  All you need to 2 ingredients and a little time.

Berries and Cream White Chocolate Bark Recipe

Ingredients
  • 16 Ounces White Chocolate Finely Chopped, or White Chocolate Chips
  • 1-2 Ounce Freeze Dried Berry Mix (Strawberries, Blue Berries and Raspberries)
Instructions
  1. Place White Chocolate in microwave-safe bowl and heat on high for 30 seconds--watch carefully. Stir with rubber spatula. Heat again for short increments of time until chocolate is smooth.
  2. Grab a cookie sheet and lay down a piece of wax paper.
  3. Sprinkle about ¾ of the freeze dried berries onto the wax paper, spacing evenly
  4. Next, slowly pour the melted white chocolate over the berries, covering it completely.
  5. Top with the remaining berries, gently pushing them into the melted chocolate so they stay in place.
  6. Set aside for 2 hours and allow to harden completely.
  7. Finally, using a knife and a little muscle, break into about 16 pieces.

 It’s as easy as it is wonderful!
