Especially since having children, I have fallen into a breakfast funk. Every morning I have cereal and yogurt. I love both of these things, but every day? It was time for a change, and time to get a little bit better fuel in the morning.
As a kid my dad had this thing about oatmeal. He felt that it was just the absolute best thing to have in the morning. The few morning my mom was elsewhere and he was serving us breakfast, he would basically force-feed us plain, goopy, terrible oatmeal. To this day I have yet to forgive him, and I continue to struggle with oatmeal.
Well, not only is quinoa more nutritious than oatmeal, but it is so much cleaner, crisper and it has this wonderful slightly nutty taste. For this reason it is the perfect oatmeal replacement–and if you plan ahead, it is so much easier to prepare than oatmeal.
Here’s the recipe, with lots of room for variation:
1 cup cooked white/gold quinoa. (click here

1 dab of butter
1 pinch of brown sugar
Fresh or dried fruit
I recommend making Quinoa in bulk ahead of time. It keeps well in the fridge and will supply easy breakfast throughout the week.
Mix Quinoa, butter and brown sugar and heat in microwave for one minute.
Add fruit and enjoy!
Sort of silly to write up a recipe for this, but it is really a great go-to for breakfast. Change up the fruit, and it doesn’t get boring.
